Watch: speed empanadas

Some of our favorite ladies shared this YouTube video this week, demonstrating how they make one variety of their empanadas.

Pampeana Empanadas, a mother-daughter empanada-making duo, sells its tasty baked empanadas at locations around Tacoma and Seattle.

Now, they're letting the rest of us in on one of their secrets.

We've been hearing the rumblings for a few weeks now. Could it be? A hot dog cart in the middle of downtown Tacoma?

Twitter pal Doug Gaynor confirms it with a photo: a hot dog cart is now open in Tollefson Plaza.

Today is T-Town Hot Dogs' first day vending downtown. 

What are you waiting for? Go forth and eat hot dogs!

Corina Bakery prepares for move, expansion

Magic is happening behind five big papered windows on Fawcett Ave.

Walls are being framed, floors cemented, and lights installed - all in preparation for the wedding cakes, scones, muffins and more that will soon fill the space.

Projected to open by Feb. 1, the new home of Corina Bakery will nearly double the bakery's seating capacity, and at least double or triple its ability to fulfill custom orders like wedding cakes.

"One of the primary reasons to do the move is we didn't physcially have enough space to do wedding cakes," says owner Molly Ott, who says the bakery is currently maxed out at about 10 wedding cakes per weekend.

Ott and her team were having to turn down cake orders, which she says they really did not want to do.

Then, one of the storefronts next to the Grand Cinema became available - it was a nice upgrade, perhaps, but still not quite enough space. Then a second space opened up and Ott knew it was time to expand.

Now, in less than a month, the spaces that most recently housed Mineola and Mavi Contemporary Art Gallery will be one, and will form Corina's new home.

We were so hungry today we nearly missed this new addition to the wall menu at Infinite Soups.

"Occupy Vegetable" is now a vegan option for diners who wishing to make a nod to the Occupy movement taking over parks and public spaces around the country. And yes, the relationship was intentional.

"We had to do it," say our favorite soupers.

And in case you were wondering, there aren't any secret Occupy ingredients - just "lots and lots of vegetables."

Gig Harbor Moctezuma's to reopen early next year

South Sounders rejoice - Moctezuma's Mexican Restaurant will reopen in Gig Harbor by January 2012 in the old Harbor Monsoon building on Fosdick Drive.

The popular restaurant, which had shut down its Gig Harbor location temporarily this summer during construction at a nearby Safeway, sent out the news Tuesday evening in an email to its Fiesta Club members (hey, one Moctezuma's Acapulco Margarita and we'll sign up for anything).

Restaurant owners promise new dishes, an updated interior design, a new bar menu "more than 100 tequilas to create the restaurant's new signature margaritas."

The reopening is scheduled for early 2012, so check back here for updates. In the meantime, tide yourself over at the Tacoma location on S. 56th Street, and make sure to try the carne asada.

New tasting hours at 21 Cellars

Wine lovers delight this month, for Tacoma's own 21 Cellars has expanded its tasting hours. 

The little basement wine cellar is now open for tastings from 4 to 7 p.m. on Thursdays, in addition to its regular hours from noon to 4 p.m. on Saturdays.

Busy Thursdays? Not to worry - the winemakers at 21 Cellars are flexible, and are happy to set up appointments outside of their weekly tasting schedule. Contact them here.

Tom and Marina will be making a visit to Forza later this week to present them with their “Seattle’s Greatest” winning plaque from Trophies2Go.com.
